About this uryuk
Uryuk is apricot dried whole, pit and all — left to ripen and dry directly on the tree in the sun rather than picked and laid out separately, the traditional way apricot has been preserved across the Caucasus for generations. No sulphur dioxide and no added sugar are used at any stage.
Drying with the pit in slows the process and concentrates the fruit further, giving uryuk a deeper, more intense sweetness than a typical dried apricot, with a dense, chewy texture. The pit isn't eaten — it's cracked away, or the fruit is simply eaten around it, the way you'd eat a fresh apricot.
Uryuk is naturally high in potassium and fibre, and is eaten by the handful across the region as an easy, energy-dense snack between meals.
Eat it on its own, or use it anywhere a whole dried apricot goes — stewed into a compote, added to a pilaf, or paired with nuts and cheese.
