About this dried persimmon
Persimmons picked at full ripeness and dried whole in the open air, with no sulphur used at any stage, so the flesh stays soft and dense rather than drying out hard. No sugar, preservative or additive of any kind. The fine white bloom you sometimes see on the skin is natural fruit sugar surfacing during drying, not a coating — a sign the fruit was dried properly, not a defect.
The flavour is rich and honeyed, closer to a date than to fresh persimmon. Pairs well with other dried fruit and nuts, or fold it into pies, porridge, muesli or a salad.
Keep it in a sealed glass container or in the fridge to hold on to the softness.
